Start your culinary journey with the delicate Muchame de Hamachi, a vibrant combination of cured hamachi, soy sauce, ikura, and shiso. The experience continues with the Ayampaco a la Braz, a perfectly grilled corvina paired with criolla sauce and cassava stew, followed by the rich and tender Paletilla de Cordero, a baby lamb shoulder served with fermented corn, roasted loche pumpkin, and a hint of coriander.
